Free cancellation windows on hostel booking sites are generous, but they end abruptly, often at midnight local time on a date you weren't watching.

Booking a bunk at a hostel like Wombat's City Hostel in Vienna or Clink78 in London usually comes with a free cancellation window shown right on the booking page, often something like 'free cancellation until 2 days before arrival.' The trouble is that this window is calculated in the property's local time zone, not yours, and it closes exactly at the stated date, not the night before it starts to feel urgent.
Non-refundable or 'saver' rates are usually 10 to 15 percent cheaper specifically because they remove your ability to change your mind, so read the rate name, not just the price, before you book.

Emailing the hostel directly, rather than the booking platform, sometimes works better than you'd expect, especially for independent hostels outside peak season. A hostel in Ljubljana with a half-empty dorm in March has more incentive to be flexible than one in Barcelona during a festival weekend in July. It costs nothing to ask politely and explain the situation.
